
I love salsa. I put it on everything. Eggs, chicken, salad….
This recipe uses fresh, summer vegetables. It is the perfect combo of sweet (from the apple) and spicy (from the jalapeno). Of course, if you are partial to mild salsa, leave out the jalapeno. It is still just as good.

Chunky Green Apple Salsa
3 perfectly ripe tomatoes
2 Granny Smith apples
½ cucumber
½ green bell pepper
½ red onion
½ cup green onions
1 handful of cilantro
1 jalapeno (add in the seeds if you like hot hot salsa!)
Juice from 2 limes
1 tablespoon balsamic vinegar
Salt, pepper, to taste
1) Chop all veggies into small pieces. Roughly chop cilantro. Gently mix all ingredients in a bowl. Let chill a few hours before serving.
-if you don’t like chunky salsa, give it a quick whirr in the blender.

Most store-bought granola bars are loaded with unnecessary fats and extra sugar.
These granola bars are low in fat and sugar. They are all natural and provide a great boost of energy! The combination of carbs, fruit, and protein provide a perfect grab-and-go snack.

Chewy Granola Bars: adapted from Cookin’ Canuck
4 cups whole rolled oats
3 large bananas, ripe
1 cup raisins
drizzle of honey (optional)
1 tsp salt
1/4 cup almonds
1/2 cup peanuts
2/3 cup unsweetened applesauce

1) Spread oats and nuts on a baking sheet. Roast for about 10 minutes at 350 degrees.

2) Place raisins in very hot water for 10-20 minutes. Until soft and plump. Drain.

3) Mash bananas in a large bowl. Add raisins, applesauce, honey and salt. Stir in oat/nut mixture. Press into a 13x9 pan sprayed with non-stick spray. Bake for 30 minutes.

4) Let cool on a wire rack. Cut into bars and store in an airtight container.
5) Enjoy! and don’t be afraid to mix things up with this recipe. Try adding your favorite nut, chocolate chips, or even ground flax seeds.

Yesterday I made chocolate brownie truffles with a vanilla candy shell.


They turned out really well. Next batch I’m going to do a peanut butter candy shell! <3 delicious!
